Polenta Cookies

You will need:


Ghee/Butter - 100 gms
Sugar - 100 gms (ground finely)
Salt - a pinch
Maida/Flour - 100 gms
Bombay Rava/Polenta - 100 gms ( ground finely)
Elaichi Powder/Cardamom - 1 tsp
Pistachio nuts - chopped




Cream sugar and ghee till the sugar is dissolved. Add the salt. Add maida, rava and elaichi powder. Knead well, yes, you must. Once it looks like a nice blob of cookie dough, pat yourself on the back. Then roll (not you, the dough silly!) and cut into small lemon sized balls.

Done?

Good.

Now, preheat your oven to a nice 150 C. Grease and flour a baking dish. Place the balls in the baking dish and flatten slightly. Sprinkle chopped pistachio nuts on the top. Lovely.

Pop the tray in, and bake for about 20-25 min until done. They should be slightly soft to touch but once cooled they will become hard. Good job!
